Southern Porch Chicken Salad
This recipe was adapted from a Southern Living recipe to accomodate Weight Watchers.
Ingredients:
- 4 c. chopped cooked chicken (I use the Marinated Grilled Chicken recipe.)
- 2 celery ribs, diced (about 1 cup) — optional
- 3/4 c. sweetened dried cranberries
- 1/2 c. chopped pecans, toasted
- 8 oz. plain fat-free yogurt
- 1/4 c. fat-free mayonnaise
- 1/3 c. honey
- 1/4 tsp. salt
- 1/4 tsp. black pepper
Preparation:
- Combine chicken, celery (if used), cranberries and toasted pecans.
- In separate small bowl, combine remaining ingredients and whisk together. Add to chicken mixture. Stir gently until combined.
- Refrigerate until use.
- Serves 4-6.
Notes:
The grilled chicken gives a wonderful flavor to this chicken salad. Alternatively, you could try a rotisserie chicken from Sam's Club or your favorite grocery store. They are excellent!
