Garlic Brown Sugar Glazed Salmon
This recipe was adapted from a recipe by Alyssa Rivers.
Ingredients:
- 2 salmon fillets
- 2 Tbsp olive oil
- 1/4 cup light brown sugar
- 1/4 cup soy sauce
- 3 garlic cloves minced
- juice of one lemon
- 1 tsp salt
- 1/2 tsp pepper
Preparation:
- Preheat oven to 350 degrees F. Line a baking sheet with aluminum foil or spray inside a 9 X 13 pyrex dish with cooking spray. Lay the salmon inside (skin side down) and sprinkle with salt and pepper.
- In a small bowl whisk together the olive oil, brown sugar, soy sauce, garlic, lemon juice, salt and pepper. Pour the glaze over the salmon. Top the salmon with aluminum foil and seal.
- Bake for 21 minutes (add a minute or two if salmon is extra thick). Take the foil off of the top and baste the salmon with the glaze. Broil for 2-3 minutes or until brown and caramelized. If desired, garnish with lemon slices and parsley.
- Serves 2.
