Low-Country Boil
Ingredients:
- 1/2 c. Old Bay Seasoning
- 2 Tbsp. salt
- 4 quarts water
- 8 med. red potatoes, quartered
- 2 lb. kielbasa sausage, cut in 2 in. lengths
- 8 ears fresh corn, broken in half (or 16 frozen cobettes)
- 4 lb. large shrimp in shells
You can change amounts depending on the size of the group , but keep the cooking times below the same.
Preparation:
- Bring Old Bay, salt and water to boil in 8-12 quart pot.
- Add potatoes and cook over high heat 8 minutes.
- Add sausage and cook 5 minutes.
- Add corn and cook 7 minutes.
- Add shrimp in shells and cook 4 minutes or until shrimp turn pink.
- Drain cooking liquid. Pour contents of pot into several large bowls, shallow pails or dump in a mound on paper covered picnic table.
