Grilled Huli Huli Chicken
This recipe was adapted from a Taste of Home recipe.
Ingredients:
- 1/2 c. packed brown sugar
- 3/8 c. ketchup
- 3/8 c. reduced sodium soy sauce
- 1/6 c. sherry or chicken broth
- 1 1/4 tsp ground ginger
- 1 tsp minced garlic
- 12 boneless skinless chicken thighs
Preparation:
- In a small bowl, mix first six ingredients. Reserve 1/2 cup for basting; cover reserved marinade and regrigerate. Place chicken in shallow dish and pour marinade over; turn to coat. Refrigerate, covered, for 4 hours (may refrigerate overnight).
- Drain chicken, discarding marinade.
- Grill chicken, covered, on an oiled rack over medium heat for 6-8 minutes on each side or until a thermometer reads 170 degrees F; baste occasionally with reserved marinade during the last 5 minutes.
- Serves 6.
