Chicken Parmesan
Ingredients:
- 1 Tbsp. olive oil
- 1 Tbsp. canola oil
- 1/2 c. seasoned bread crumbs
- 1/4 c. grated Parmesan cheese
- 1 tsp. dried basil
- 1 Tbsp. butter
- 4 chicken breasts (boneless, skinless)
- 1/4 c. grated mozzerella cheese
- 1/2 c. pasta sauce
Preparation:
- Warm pasta sauce over low heat.
- Flatten chicken breast to 1/4 inch thickness.
- Coat chicken breasts with olive oil.
- In a shallow bowl combine bread crumbs, parmesan cheese and basil.
- Coat chicken with crumb mixture.
- In a large skillet brown chicken in butter and canola oil over medium heat for 3-5 minutes on each side.
- In the two minutes of browning sprinkle mozzerella over chicken and cover skillet.
- Move chicken to serving plates.
- Top with warm pasta sauce.
