Chicken Marsala
Ingredients:
- 1/4 c. flour
- 1/4 tsp. salt
- 1/8 tsp. black pepper
- 4 chicken breasts (boneless, skinless)
- 1 Tbsp. olive oil
- 1/2 c. Marsala wine
- 1/2 c. sliced mushrooms
- 1/2 c. chicken broth
- 1/2 lemon
- 2 c. bow tie pasta (cooked)
Preparation:
- Mix flour, salt and pepper together.
- Roll the chicken in this mixture until well coated.
- Pour the olive oil into a saucepan and heat to medium.
- Brown the chicken on both sides in the oil.
- Remove the chicken to a plate.
- Pour the wine into the oil and warm.
- Mix in the mushrooms, chicken broth and the juice of the lemon.
- Simmer for 10 minutes.
- Add in chicken and cook covered another 10 minutes.
- Serve over pasta.
